Preheat oven to 365″ Peel and core apples, set aside. In a large bowl mix walnuts, brown sugar and vanilla. Tightly pack the walnut filling inside the cored apples. Set apples in a deep baking pan or dish. Drizzle apples with olive oil. Bake for 35 minutes on 365″ until apples are soft enough for a knife to easily go through.
Served chilled by itself or with a side of ice cream , whipped cream or touch of carmel.
