A Taste of Serbia on the Banks of the Drina


This journey begins along the banks of the legendary Drina River near Vlada’s childhood home. Surrounded by breathtaking scenery, friends and family gather to prepare one of Serbia’s most beloved comfort foods: traditional goulash.

Slow-cooked over an open fire, Serbian goulash is far more than a meal. It is a symbol of hospitality, patience, and community. The cooking process itself becomes part of the celebration as people gather around the pot, share stories, laugh together, and enjoy the simple pleasures of being present with one another.

The rich aroma of onions, smoked bacon, paprika, wine, and tender beef fills the air as the stew slowly develops its deep, comforting flavor.

Bringing Tradition Home

Returning home to California, Vlada recreates this treasured family recipe using fresh ingredients harvested from her own garden.

By incorporating locally grown vegetables and supporting nearby farmers, she demonstrates how traditional recipes can adapt to modern life while preserving their cultural roots and authentic flavors.

Traditional Serbian Goulash Recipe

Ingredients

  • 2 small onions, finely chopped
  • 1/4 cup smoked bacon or pancetta, diced
  • 1/2 cup olive oil
  • 2 celery stalks, chopped
  • 1 cup carrots, chopped
  • 4–5 pounds beef, cut into cubes
  • 1 small can diced tomatoes
  • Salt and pepper to taste
  • 1½ tablespoons flour
  • 1½ teaspoons Hungarian paprika
  • 3–4 bay leaves
  • 1 cup red wine
  • 1 cup beef broth
  • Fresh parsley for garnish

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the diced bacon or pancetta and cook until lightly browned.
  3. Add the onions and sauté until soft and translucent.
  4. Stir in the celery and carrots and cook for several minutes.
  5. Add the cubed beef and cook until browned on all sides.
  6. Sprinkle the flour over the meat and vegetables and stir well.
  7. Add the Hungarian paprika and mix until evenly distributed.
  8. Stir in the diced tomatoes and bay leaves.
  9. Pour in the red wine and beef broth.
  10. Season with salt and pepper to taste.
  11. Bring the mixture to a gentle boil, then reduce heat to low.
  12. Cover and simmer slowly for approximately 2½ to 3 hours, stirring occasionally, until the beef becomes fork-tender and the flavors are fully developed.
  13. Remove the bay leaves before serving.
  14. Garnish with fresh parsley.

Serve with rustic bread, homemade noodles, mashed potatoes, or simply enjoy it on its own.
