Plasma Cake

For the longest time, cakes have played a big part of our special life celebrations. Plasma cake (or Plazma Torta in Serbian) has been one of our favorites. Plasma Cake features simple, all natural and nutrient rich ingredients like omega rich walnuts, protein rich eggs, real butter and vitamin rich fresh orange juice.

Ingredients
Cake
  • 3 egg whites
  • 3 tablespoons of granulated sugar
  • 3 egg yolks
  • 3 tablespoons of flour
    Filling
  • 3 sticks of room temperature butter
  • 1 1/2 cups of powdered sugar
  • 5 egg yolks
  • 1 tablespoon vanilla
  • 7 cups walnut mix (2 parts ground walnuts and 1 part ground graham crackers)
  • 1 cup freshly squeezed orange juice (for walnut mix)
  • 1/2 cup freshly squeezed orange juice (for cake moisture)
    Frosting
  • 1 cup sugar
  • 5 egg whites
  • 4 tablespoons sugar
  • Optional: walnuts for decorating

Instructions

Cake Mix
  1. Preheat the oven to 350F.
  2. Using a hand or stand mixer, whip up 3 egg whites and add 3 tablespoons of sugar.
  3. After whipping the egg whites really well, add the 3 egg yolks and ensure to incorporate it well.
  4. Add 3 tablespoons of flour and fold it in gently.
  5. Transfer the mixture to a greased and floured cake pan.
  6. Place it over for about 15 to 20 minutes depending on your oven.

While the cake is baking, prepare the walnut mixture.

  1. Using a hand or stand mixer, beat 3 sticks of butter (room temperature) really well with 1 1/2 cups powdered sugar.
  2. Add 5 egg yolks and 1 tablespoon of vanilla to it.
  3. In a separate bowl, mix ground walnuts and ground graham crackers together. You will want a total of 7 cups in the end and the mixture should be 2 parts ground walnuts and 1 part graham crackers.
  4. Add 3 cups of walnut mix to the egg/butter mixture. Mix it in well.
  5. Add 1 cup of fresh orange juice and 2 cups of walnut mix. Mix it in well.
  6. Add 2 more cups of walnut mix. Once the cake is ready, pour 1/2 cup orange juice all over the cake. This will keep the cake nice and moist.
  7. Add the walnut mixture on top of the cake.
  8. Set in the fridge for at least an hour.
    Frosting

While waiting for it to set, make the frosting.

  1. Place 1 cup of sugar in a pot on the stovetop. Let it melt slowly.
  2. Whip 5 egg whites and 4 tablespoons sugar using a hand mixer or stand mixer.
  3. Once the sugar is completely melted, slowly add it while whipping.
  4. Ensure the sugar is completely incorporated before decorating the cooled cake.

While we always try to eat healthy and avoid any additional sugar in our kids’ diets, we love using this all natural and nutrient rich cake recipe for celebrations and events.
