This homemade jam is made without using any preservatives. We’re going to make it using just fruit sugar and lemons. We could bring some of those old world traditions by using lemons as a natural preservative.

For a small batch of fig jam, use:
Ingredients
- 7lb fresh figs
- 2lb sugar
- juice of 3 lemons
- 10 8oz jars
1. First, wash your figs and cut them in halfs.
2. Place your figs in a large pot.
3. Place the sugar on top.
4. Set the stove to medium high heat. It will start to cook within 10 minutes for smaller batches and 40 minutes for larger batches.
5. Stir occasionally to ensure the sides don’t crust up. For thicker jam, allow 50% of the fluids to evaporate.
7. Place clean jars in oven to warm up to maybe 125 degrees as this will be to sanitize them.
8. Squeeze fresh lemon juice from 3 lemons.
9. Stir the lemon juice into your pot.
10. Take out the jars from the oven and fill each jar with jam and close the lids.
Once you open the jar, place it in the fridge and try to eat it within 2 weeks.
