This recipe is rich in protein, fiber, and nutrients … wonderful for you and your kids!
Using separate dishes, allow your kids to practice breaking the eggs and separating the yokes, while you combine the other ingredients. (Stainless steel yoke separators are available at most grocery stores.) When ready, the kids can pour the eggs into your bowl and help stir the dough. They will have so much fun!
2 sticks unsalted butter (room temperature)
6 egg yolks
1 cup brown sugar ( or raw sugar)
1 cup all natural peanut butter
1 cup all natural apricot jam
1 tsp. baking powder
1/4 tsp. ground nutmeg
1 tsp. all natural vanilla
1/2 tsp. ground ginger
3 tbsp. ground flax seed
2 cups all purpose flour
Mix ingredients as listed. When dough is ready, allow it to cool for about 2 hours before baking it at 350 degrees for about 15 minutes.
