Peanut Butter Stir Fry

This is one of the most unusual recipes I have ever created. Kids love it!

Prep time 15 minutes. Serves 4.

1/2 cup olive oil

5 cloves garlic

4 cups broccoli (cut)

1/2 cup sliced celery

1 cup cooked black rice (or any rice)

2 tbsp. all natural peanut butter

1 cup cooked sliced ham or chicken

Soy sauce & black pepper to taste

Start by preheating olive oil, add garlic and celery and fry for 2-3 minutes. Next, add broccoli and rice, and cook for 3-4 minutes before adding ham, peanut butter, and soy sauce. Finish with a touch of black pepper.
