Vanilla Snowflakes – Whole Wheat

These cookies are a traditional Serbian treat often served during holidays. The recipe is my personal twist to this classic.
4 sticks unsalted butter (2 cups)
1 cup powdered sugar
Juice of 1 lemon plus zest
4 Tbsp. real vanilla
2 cups ground walnuts
1 cup whole wheat flour
2+ cups white flour
1 1/2 cups peach jam
Pinch of salt
Additional 1 cup powdered sugar (optional)
Whip (room temperature) butter; add sugar, lemon juice, lemon zest, vanilla, salt and walnuts. Mix well before adding flour. Form semi-hard dough and let cool in fridge for 1 hour. Spread the cooled dough to 1/4 inch thickness and cut out small circles approx. 1-1/4 inches in diameter. Bake at 360 degrees for about 10 minutes and let cool. Make sandwiches by spreading peach jam on one side of the cookie and adding another cookie on top. Roll “sandwiches” in additional powdered sugar and serve!
