Italian Sausage Pasta Sauce

For years I have been enjoying making different sauces using Rinaldi pasta sauce, and this is just one of my favorites!

1/2 c. olive oil

1 med. onion

2 stalks celery

1 med. eggplant

6 sweet Italian sausage links

1 zucchini

1 medium to large carrot

1 jar Rinaldi spaghetti sauce (24 oz.)

Fresh basil

Shrimp Chow Mein

You don’t have to be Chinese to cook great Chinese food! Experimenting is fun, so lets experiment together:


6-7 green onions

1 Portobello mushroom

1/4 olive oil

4-5 cloves fresh garlic

1 small bell pepper

10 large tiger shrimp

1/2 teaspoon soy sauce

Pinch of salt & black pepper

Roasted sesame seeds and hot sauce (optional)

Pasta 101 by Mickie

So easy,  even kids can make this! Kids, always ask your parents’ permission and presence in the kitchen before starting to cook.


7 cloves fresh garlic

1/2 cup extra virgin olive oil

4 cups cubed or sliced fresh tomato

Salt & black pepper to taste

Pinch of oregano

Small bunch fresh basil, chopped

Stuffed Shells with Sausage & Vegetables

Want to make something different for dinner? Fancy yet easy, this dish is sure to please taste buds and eyes! Kids can be a great help by shredding zucchini and helping to stuff the shells.


3 cloves chopped garlic

1/4 cup olive oil

1 Tbsp. dry or fresh basil or parsley

1/4 med. chopped onion

6 mild Italian sausages

1/2 cup shredded zucchini

1/2 cup shredded large carrots

12 oz.  jumbo shells, precooked “al dente”

1 egg

1 1/2 cups mozzarella cheese

2 cups Rinaldi tomato sauce of your choice

Pinch of salt & pepper

Preheat oven to 360 degrees. On the stove, heat olive oil in a pan. Add onions and sausage. When onions and sausages are cooked, add carrots. When carrots have softened a bit, add zucchini. While the mixture is browning, add garlic and basil. After everything is well cooked, remove from heat. Add an egg to keep the ingredients from separating. Add salt and pepper, and stir. Spoon the sausage mixture into precooked shells. Top with tomato sauce and mozzarella cheese. Top with foil and bake for 20 minutes. (The foil keeps the shells moist, cooks the egg, and brings the food to the right temperature.) Remove foil, add parsley, and place in oven for 10 additional minutes.

Shells & Cheese Mama’s Way

Is pasta and cheese good for kids? Sure, as long as it is made with all natural ingredients. Take a look at this recipe …
4 cups whole wheat shell pasta or macaroni
2 cups milk
1/4 cup butter
4 oz. cream cheese
1/2 tsp. sea salt
1/4 cup mozzarella cheese
1 cup Muenster  cheese (or cheddar), shredded or chopped
1/4 cup panko bread crumbs

Cook whole wheat shells until half cooked, and drain. In a separate dish, warm milk, butter, cream cheese, and salt. When mixture is creamy, add pasta and mix well. Pour mixture in baking pan and add cheese. (I use 5 slices Muenster and about 1/4 c. mozzarella.) Top with panko bread crumbs. Bake at 360 degrees for about 20 minutes or until top is golden brown. Have fun cooking!

Zucchini & Pork Pasta

Pasta dishes are so versatile, and the possibilities are countless! Here is yet another way to serve pasta in a fun and absolutely delicious way!
1/2 c. olive oil
3 med. onions, chopped
4 c.  cubed pork tenderloin

1/2 c. of your favorite pasta sauce

1 zucchini, shredded

4 cloves fresh garlic, chopped

Small bunch of fresh parsley
Salt & pepper to taste

Directions: Add onions to preheated oil and cook on med-high for about 10 minutes. Add meat cubes and continue cooking for an additional 15 minutes on med-high. During this time you may want to add some beef broth to prevent onions from burning (or you could substitute red wine). Now we are ready to add pasta sauce. Reduce fire to med-low and simmer for an additional 25-30 minutes, mixing occasionally. Add zucchini and cook for another 7 minutes. We are almost done, so lets add garlic, salt & pepper, and chopped parsley. Simmer for 5 more minutes and you are ready to serve this over your favorite pasta!

Easiest Fresh Penne Ziti Pasta

This recipe was born in real rush … I needed dinner fast and all I had in my fridge were some cold-cuts and a few vegetables. Sometimes the  easiest recipes are the best recipes!

1-lb. pkg. precooked ziti pasta (organic whole wheat)

1/3 cup extra virgin olive oil

 1/2 large onion, sliced

1 large red bell pepper, sliced

5 cloves of garlic, chopped

1  large zucchini, sliced

3 cups cold cuts, cut into strings

Black pepper to taste

Approx. 1 Tbsp. soy sauce

Fresh basil (optional)

Directions: In frying pan preheat olive oil and add onions, and cook for 2 minutes or until golden brown. Add bell pepper and cook another 3 minutes. Add garlic and zucchini, and cook for an additional 3 minutes. Now it’s time to add your choice of cold cuts. I used ham, but turkey would work just as well. When meat has cooked for few minutes, add precooked pasta, soy sauce, and black pepper. This recipe is also wonderful with leftover cooked sausages. Anyway you try it, I think you’ll like it!

Eggplant & Sausage Spaghetti Sauce

Elevate ordinary spaghetti sauce to a whole new experience! This sauce is  lip-smacking delicious. Loaded with extra vegetables and sweet Italian sausage,  a meal like this is complete in every way!
1 med. onion (chopped)
3/4 c.  olive oil
2 sticks celery, chopped

1 med. eggplant, chopped into small cubes

6 sweet Italian sausages

1 zucchini, shredded

1 large carrot, shredded

1 jar of your favorite spaghetti sauce

5-6 cloves fresh garlic
