Corn Bread with Feta Cheese & Broccoli

Why make plain corn bread when you can have more flavor and nutrition with this recipe?

5 eggs
1 c. corn meal
2 c. wheat flour
1 1/2 c. olive oil
1 1/2 c. milk
3/4 tsp. baking soda
1 tsp. baking powder
1 1/2 tsp. sea salt
2 tbsp. raw sugar
2 c. cut broccoli 

Start by whipping eggs. To the whipped eggs add olive oil, milk, sugar, and salt, and whip a bit more. Add baking soda and baking powder, broccoli, corn meal, and flour. Top with 1 c. feta cheese (optional) and bake at 360 degrees for about 35 minutes.

2 cups spinach ( previously frozen, well drained)

1/2 cup extra virgin olive oil

4 eggs

1 lb. phyllo dough

Easy Guacamole

Avocado, onions, garlic, cilantro, lime … this couldn’t be any healthier or easier to make, so let’s get started!

3 large (or 6 small) ripe avocados

1/2 med. onion finely chopped

2 tablespoon chopped cilantro

4-5 cloves fresh garlic finely chopped

Juice of 2 limes

Salt and pepper per taste

And that’s all it takes!

Roasted Pepper & Cilantro Hummus

Rich in nutrition and taste, this healthy treat is perfect served on your favorite crackers, toast or chips.

Two 15 oz. cans garbanzo beans

1⁄2 cup walnuts

2 red bell peppers (roasted or grilled and peeled)

1 med. onion (roasted or grilled)

1 teaspoon sea salt

1⁄2 teaspoon black pepper

Small bunch cilantro

Juice of 2 limes

4 cloves fresh garlic

1 cup extra virgin olive oil

1 teaspoon apple cider vinegar

Goat Cheese & Fig Spread

This recipe was specially created for Danza del Sol winery. It is great as appetizer or served on toast as part of a breakfast menu or an afternoon snack for your kids.

1 stick unsalted butter 
1 cup powdered sugar 
1 tbsp. real lemon juice 
1 tsp. real vanilla 
4 oz. goat cheese
4 oz. cream cheese
1 tbsp. raw honey
1 cup fig jam (or peach or apricot) 

Start by whipping butter and sugar. Add lemon juice and vanilla, and whip well. Add goat and cream cheese with honey and whip again. When mixture becomes creamy, add fig jam and slowly combine while allowing chunks of figs to remain in spread. Cool before serving on your favorite crackers or toast. Also delicious when combined with Italian prosciutto and your favorite spicy cheese.

Vlada’s “Pesto” Hummus

This recipe combines two very healthy options – hummus and pesto – in one taste good/feel good treat. Serve as a spread, dip, or as an  addition to your favorite dishes.
2 cans garbanzo beans
1/2 cup Parmesan cheese
1/4 tsp. black pepper
1/2 cup walnuts
1 bunch fresh basil
1/4 cup balsamic vinegar
1 tsp. sea salt
5 cloves fresh garlic
1 1/2 cup extra virgin olive oil
In a food processor , combine all ingredients except olive oil and mix for about 30 seconds. Add olive oil and mix for another 10 seconds and you are done! It’s that simple.
