Kids Risotto

One night, my kids wanted to make dinner for me. The deal was that I needed to stay out of kitchen the whole time. I did, however, stay at the kitchen table giving them gentle guidance and making sure they remained safe around the stove. For detailed instructions visit: Kids Risotto

1 med. onion chopped

1/2 olive oil

1 cup baby carrots chopped

8 chicken tenders or 4 pieces chicken breast (2 whole breasts cut in half)

2 packages all natural chicken flavored rice

4 cups water

Pinch of black pepper

Small bunch of fresh parsley

Start by preheating olive oil in a large pot. Add the onions and cook for 3-4 minutes. Add carrots and cook for another 2-3 minutes. Next, add the chicken and cook for about 5 minutes before adding rice, water, and black pepper. With the fire on med-low, cook rice for an additional 15 minutes. Just before rice is fully cooked, add chopped parsley. Serve with a  side of steamed vegetables.
