1/2 c. of your favorite pasta sauce
1 zucchini, shredded
4 cloves fresh garlic, chopped
Small bunch of fresh parsley
Directions: Add onions to preheated oil and cook on med-high for about 10 minutes. Add meat cubes and continue cooking for an additional 15 minutes on med-high. During this time you may want to add some beef broth to prevent onions from burning (or you could substitute red wine). Now we are ready to add pasta sauce. Reduce fire to med-low and simmer for an additional 25-30 minutes, mixing occasionally. Add zucchini and cook for another 7 minutes. We are almost done, so lets add garlic, salt & pepper, and chopped parsley. Simmer for 5 more minutes and you are ready to serve this over your favorite pasta!
