Easiest Fresh Penne Ziti Pasta

This recipe was born in real rush … I needed dinner fast and all I had in my fridge were some cold-cuts and a few vegetables. Sometimes the  easiest recipes are the best recipes!

1-lb. pkg. precooked ziti pasta (organic whole wheat)

1/3 cup extra virgin olive oil

 1/2 large onion, sliced

1 large red bell pepper, sliced

5 cloves of garlic, chopped

1  large zucchini, sliced

3 cups cold cuts, cut into strings

Black pepper to taste

Approx. 1 Tbsp. soy sauce

Fresh basil (optional)

Directions: In frying pan preheat olive oil and add onions, and cook for 2 minutes or until golden brown. Add bell pepper and cook another 3 minutes. Add garlic and zucchini, and cook for an additional 3 minutes. Now it’s time to add your choice of cold cuts. I used ham, but turkey would work just as well. When meat has cooked for few minutes, add precooked pasta, soy sauce, and black pepper. This recipe is also wonderful with leftover cooked sausages. Anyway you try it, I think you’ll like it!
