Fresh Apple Salad

A quick way to a tasty and healthy snack or salad!

4 apples pealed & shredded

Juice from 1/2  fresh orange

1 tbsp. raw honey

Touch of real (pure) vanilla

Dash of cinnamon

1/3 c. raisins or cranberries 

Mix apples, honey, vanilla, cinnamon, and orange juice together.

Serve topped with raisins and cranberries.

Homemade Corn Dogs

All kids, including mine, love corn-dogs! To make everyone happy I decided to create my own version using better ingredients. The final comment was, ” Can you make more tomorrow?” This batter is good for about 10 corn dogs.

 2 eggs
Good pinch of salt
1/4 tsp. granulated garlic
1/4 tsp. black pepper
1 c. buttermilk pancake mix
1/2 c. corn meal
1/4 c. milk
1/4 tsp. baking soda
1/2 tsp. baking powder

Fry the corn dogs in 1 1/2 c.  oil; I suggest peanut oil.

Mickie’s Dinner Rolls

Some of the best things in life come from the kitchen! Most of you already have these ingredients at home, so just call your kids in and let the good times roll! Mickie and Marko will take you step-by-step through the instructions.

3 c. wheat flour

1 c. whole wheat flour

1/2 tsp. sea salt

2 tsp. dry active yeast

1 tsp. raw sugar

2 1/2 c. warm water

1 stick (8 tbsp.) real butter

Strawberry & Honey Lemonade

Hey kids, this recipe is made just for you!  YOU CAN MAKE THIS!

2 cups fresh strawberries

2 cups cold water

2 tablespoons or more of raw honey (or raw sugar)

Juice of 2 lemons

4 cups ice

This easy-to-make, refreshing summer treat is great replacement for soda and sugary drinks. Just follow the instructions!

Kids Risotto

One night, my kids wanted to make dinner for me. The deal was that I needed to stay out of kitchen the whole time. I did, however, stay at the kitchen table giving them gentle guidance and making sure they remained safe around the stove. For detailed instructions visit: Kids Risotto

1 med. onion chopped

1/2 olive oil

1 cup baby carrots chopped

8 chicken tenders or 4 pieces chicken breast (2 whole breasts cut in half)

2 packages all natural chicken flavored rice

4 cups water

Pinch of black pepper

Small bunch of fresh parsley

Start by preheating olive oil in a large pot. Add the onions and cook for 3-4 minutes. Add carrots and cook for another 2-3 minutes. Next, add the chicken and cook for about 5 minutes before adding rice, water, and black pepper. With the fire on med-low, cook rice for an additional 15 minutes. Just before rice is fully cooked, add chopped parsley. Serve with a  side of steamed vegetables.

Peanut Butter Stir Fry

This is one of the most unusual recipes I have ever created. Kids love it!

Prep time 15 minutes. Serves 4.

1/2 cup olive oil

5 cloves garlic

4 cups broccoli (cut)

1/2 cup sliced celery

1 cup cooked black rice (or any rice)

2 tbsp. all natural peanut butter

1 cup cooked sliced ham or chicken

Soy sauce & black pepper to taste

Start by preheating olive oil, add garlic and celery and fry for 2-3 minutes. Next, add broccoli and rice, and cook for 3-4 minutes before adding ham, peanut butter, and soy sauce. Finish with a touch of black pepper.

Whole Wheat & Flax Seed Pizza as Featured in Costco Magazine

This recipe will provide healthy, rich pizza dough for two 14” thin-crust pizzas. Our video and instructions vary slightly from the version in the magazine, however both will deliver delicious dough and an amazing pizza.

Ingredients:

2 ½ cups all-purpose whole wheat flour*
¼ cup wheat bran
¼ cup ground flax seeds*
½ tsp. dry organic oregano*
½ tsp. sea salt (or regular salt)*
1 ½ cups warm water
1 tsp. raw sugar (or white sugar)*
2 tsp. dry active yeast*
½ cup extra virgin olive oil*

Instructions:

Combine 2 cups flour (keep the additional ½ cup for later use) with wheat bran, ground flax seeds, oregano, and salt. In a separate cup, mix the warm water and sugar, and add the dry active yeast. Let the mixture sit until the yeast is activated. Combine the activated yeast with the flour mixture, kneading it into a soft dough. If needed, use part of the remaining ½ cup flour to help form your dough. Let the dough rest in a warm place for about 10-15 minutes.

When the dough has doubled in size, re-knead the dough on a working surface, cut it in half, knead it again, and let it rest for 5 minutes. Roll out the pizza dough into two 14” pizza crusts, and put them in well-oiled round baking pans.

Top the pizzas with your favorite toppings, and bake at 370 degrees for 20-25 minutes.

Hot Pizza Sandwiches

When you can’t have pizza, try making easy hot pizza sandwiches! Kids, these are really good! I am sure that your parents will like them too. Remember, when cooking always seek adult supervision in the kitchen. For this recipe you will need approximately:

10 slices of bread (whole wheat or other)

1/2 cup olive oil

2 cups spaghetti sauce

3 cups shredded mozzarella cheese

4 cups cubed fully cooked meatballs, cubed

A touch of fresh basil

So easy,  even kids can make this! Kids, always ask your parents’ permission and presence in the kitchen before starting to cook.

Ingredients:

7 cloves fresh garlic

1/2 cup extra virgin olive oil

4 cups cubed or sliced fresh tomato

Salt & black pepper to taste

Pinch of oregano

Small bunch fresh basil, chopped

Whole Wheat Waffle Cookies

I recreated an old recipe using whole wheat flour, and it worked wonderfully! For easy directions, just follow our instructional video.

Ingredients:

2 sticks butter (1 cup)

1 cup raw sugar

3 whole eggs

1 Tbsp. real vanilla

3/4 tsp. baking powder

1 cup milk

4 cups whole wheat flour

Bake in a waffle maker until they are nice and brown, and the dough is well-cooked.
